Ingredients Needed for Zucchini Gazpacho

1 tablespoon vegetable oil
1 zucchini, sliced
2 garlic cloves, crushed
2 tablespoons of greek yogurt
salt
pepper

How to Make Zucchini Gazpacho

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the zucchini, garlic, and cook it for 2 minutes per side.
  3. Put the cooked zucchini in your blender.
  4. Add the yogurt and season with salt and pepper.
  5. Blend everything until smooth. Serve!
