Zucchini Gazpacho

Gazpacho is a traditional Spanish soup, made with raw vegetables and served cold. This one down-below is not exactly by the books, because we’ve cooked the zucchini a bit as to tenderize and give it extra flavor. Serve it with a touch of Greek yogurt and enjoy its fresh and cool flavor on a warm, summer day!

Ingredients Needed for Zucchini Gazpacho

    1 tablespoon vegetable oil
    1 zucchini, sliced
    2 garlic cloves, crushed
    2 tablespoons of greek yogurt
    salt
    pepper

How to Make Zucchini Gazpacho

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the zucchini, garlic, and cook it for 2 minutes per side.
  3. Put the cooked zucchini in your blender.
  4. Add the yogurt and season with salt and pepper.
  5. Blend everything until smooth. Serve!
