Ingredients Needed for Zucchini and Feta-Stuffed Avocado

1 medium avocado
1 small zucchini, lengthwise cut into thin strips
salt
pepper
2 fresh thyme sprigs
1 tablespoon lemon juice
3 ounces of feta cheese, cubed
1 tablespoon almond flakes for garnishing

How to Make Zucchini and Feta-Stuffed Avocado

  1. Cut the avocado in halves, remove its stone, and scoop out its pulp from both halves (keep a thin layer of pulp). Cut into small cubes the avocado pulp and add it to a bowl.
  2. Add the zucchini thin strips, fresh thyme leaves, and lemon juice to a bowl. Season with salt and pepper and stir.
  3. Transfer the zucchini to another bowl and discard the juice. Add the avocado and feta and combine them.
  4. Fill the avocado halves with this mixture. Garnish with the almond flakes.
