Ingredients Needed for Zucchini and Corn Fritters

1 zucchini, shredded
2 ounces of sweet corn
1 ounce pumpkin seeds
½ cup whisked egg
1 cup flour
½ cup milk
salt
1 tablespoon vegetable oil
1 tablespoon sour cream
chili flakes

How to Make Zucchini and Corn Fritters

  1. Let’s start with the pancake mixture. Use a large bowl and add zucchini, sweet corn, and pumpkin seeds. Pour whisked egg, flour, and milk and finally season with salt. Mix all together until you obtain a smooth batter.
  2. Add vegetable oil in a skillet, heat it and begin frying your pancakes. Fry them for 2-3 minutes on each side.
  3. Put all your pancakes on top of the other and serve with sour cream and chili flakes.
