Warm Shallot, Pear, and Chicken Salad

When it’s cold outside, a warm salad can bring you the comfort and nutrients you desperately need. This one is a healthy and light dish, where you pair veggies like shallots and lettuce with chicken breast and blue cheese. Get bolder and add some cooked pear slices into the mixture. Just eat it warm to really enjoy its softness.

1 tablespoon olive oil
2 pears, sliced
1 shallot, chopped
1 tablespoon balsamic glaze
1 tablespoon dijon mustard
2 carrots, sliced
8 ounces of cooked chicken breast, cubed
1 tablespoon walnut
½ lettuce head
1 ounce blue cheese, chopped

  1. Add the olive oil in a skillet and cook the sliced pears over low heat, while stirring, for a minute or two. Set aside.
  2. Using the same skillet, cook the shallot until tender. Add the balsamic glaze and mustard and stir, then add the sliced carrots, chicken breast, and walnuts while stirring. Finally, add the cooked pears and season with salt and pepper, then stir.
  3. Move the mixture to a bowl and add the lettuce and blue cheese. Toss everything using two spatulas.
