Ingredients

2 tablespoons of extra virgin olive oil
1 red onion, chopped
1 small fennel bulb , sliced
2 garlic cloves, crushed
1 teaspoon dried tarragon
½ teaspoon chili flakes
¼ cup vegetable stock
1 cup French lentil, cooked
4 sun-dried tomatoes, drained and sliced
salt
2 tablespoons of red wine vinegar
2 ounces of smoked low moisture mozzarella, cut into cubes
3 ounces of arugula
fresh parsley (optional)

Heat the olive oil in a skillet. Add the onion and cook it until soft.

Add the fennel, garlic, tarragon, chili flakes, and vegetable stock. Simmer until fennel is tender, about 2-3 minutes.

Add the cooked lentils, sun-dried tomato, salt, red wine vinegar, and mozzarella cubes. Stir and cook further for a few minutes.

Serve on a bed of arugula and garnish with fresh parsley, if you want.
