These wonderful vegan muffins are made with walnuts and dates, mixed with a touch of cocoa, and baked to perfection! Feel free to add some dried fruits or some of your favorite nuts, as a topping, when serving them.

Ingredients Needed for Walnut and Date Muffins

10 ounces of walnut
4 ounces of date
3 eggs
2 tablespoons of cocoa powder
1 teaspoon coconut oil
¼ cup water

How to Make Walnut and Date Muffins

  1. Preheat the oven to 350°F/175°C.
  2. Process the walnuts in your food processor.
  3. Add the dates, eggs, cocoa, oil, and water.
  4. Set the mixer at medium speed, and mix until all of the ingredients combine.
  5. Grab a 6-cup muffin tray, and fill its empty slots with muffin wrappers.
  6. Pour the mixture with a ladle, filling the slots.
  7. Slide the tray into the oven for the next 20 minutes.
