Waffles with Mushrooms

Waffles are always a good idea, especially in the morning when you need something warm and comforting. But you can enjoy a waffle not only at breakfast but also at lunch or dinner. Just add in the batter some fried mushrooms and mozzarella.

Ingredients

2 mushrooms
2 chili peppers
1 tablespoon vegetable oil
½ cup flour
½ teaspoon baking powder
1 egg
salt
½ cup milk
⅔ cup cheddar cheese, shredded

Steps

  1. Dice the mushrooms and the chili peppers.
  2. Heat the vegetable oil in a skillet and fry the mushrooms until they turn soft.
  3. In a medium bowl, put the flour, the baking powder, the egg, some salt, and the milk.
  4. Whisk all the ingredients to make a batter.
  5. Grease and heat the waffle maker.
  6. Pour batter into each form and sprinkle on each waffle some fried mushrooms, Cheddar cheese, and 3-4 chili slices.
  7. You’ll make about 4 waffles from this batter.
