Don’t these cucumber rolls closely resemble sushi? We thought so, too. We could call this vegetarian sushi with a Greek touch thanks to the feta cheese and Kalamata olives. Adding a bit of hummus makes them even more intriguing. Just as their Japanese counterparts, they’re pretty healthy. And even easier to make.

Ingredients Needed for Vegetarian Cucumber and Feta Sushi

1 cucumber
3 ounces of hummus
3 ounces of feta cheese, crumbled
2 ounces of red cherry tomatoes, minced
2 ounces of yellow cherry tomatoes, minced
2 ounces of kalamata olives, chopped
fresh dill

How to Make Vegetarian Cucumber and Feta Sushi

  1. Cut the cucumber lengthwise into thin strips using a peeler. Keep the wider ones and discard the others. We’ve settled for 6 cucumber strips.
  2. Place them between paper towels and pat them down.
  3. Spread the cucumber strips with hummus and add feta, minced cherry tomatoes, olives, and dill. Roll them and serve them on a tray.
