Tuna Stuffed Baked Potatoes

Ingredients

3 ounces of canned tuna
½ lime
¼ onion
salt
2 tablespoons of yogurt
1 tablespoon chopped parsley

First, bake the potatoes. Preheat the oven to 400 degrees F/200 degrees C.

Wash the potatoes and rub them with a little olive oil. Place them on a baking tray and bake for 45 minutes or until the skin becomes crispy.

Cut the potatoes in half and scoop out some of the flesh. Fill with half of the canned tuna, squeeze lime juice, add onion rings and again tuna.

Season it with salt, add yogurt and chopped parsley.

I've just realized that I might be on the right track with life and everything. I love baking muffins in the middle of the night, pairing thyme and bacon in a hot sizzling pan more often than it’s allowed, chopping onion, crying my eyes out and then doing it again without a second thought.
