½ cup flour
1 trout, skin on
vegetable oil for frying
½ red onion, rings
12 cherry tomatoes, sliced in halves
1 ounce black olive
How to Cook Trout With Cherry Tomato Sauce
- Cover the trout with flour, making sure the middle is also covered.
- Heat a skillet and fry the fish for 3 minutes on each side.
- Heat a second pan and add 1 tablespoon of vegetable oil. Cook onion for 1 minute, until it becomes translucent. Add cherry tomatoes, olives, and a pinch of salt. Mix with a spoon and cook 6-8 minutes, until you obtain a thick sauce.
- Serve the fish with sauce on top and add a few coriander leaves for an extra flavor.
