Ingredients Needed for Sweet Potato and Bacon Casserole
2 sweet potatoes
1 teaspoon oil
¼ cup mozzarella, shredded
6 bacon
2 mushrooms
½ cup tomato sauce
1 egg
1 teaspoon dried oregano
How to Make Sweet Potato and Bacon Casserole
- Preheat the oven to 350 degrees F/ 180 degrees C.
- Slice the sweet potatoes in thin slices.
- Add the oil in a cast-iron skillet.
- Place the sweet potato slices on the bottom of the skillet in circles, so that they cover the whole skillet.
- Sprinkle the shredded mozzarella on top of the potato slices.
- Add the 3 bacon slices in a flower pattern.
- Slice the mushrooms and add the pieces over the bacon.
- Pour the tomato sauce over all ingredients.
- Crack an egg in the middle of the skillet.
- Sprinkle dried oregano over the dish.
- Sprinkle another layer of shredded mozzarella.
- Cook in the oven for 20 minutes.
