Ingredients Needed for Stuffed Baked Apples
4 large apples
For the filling:
6 dried plums
1 tablespoon dried cranberries
1 tablespoon raisins
½ cup red wine
1 tablespoon sugar
1 teaspoon cinnamon
½ cup walnuts, chopped
For the crumble:
2 egg whites
½ cup sugar
1 egg yolk
½ cup flour
¼ cup walnuts, chopped
½ cup tapioca flour
For the topping:
½ cup red wine
6 dried plums
1 cinnamon stick
1 tablespoon sugar
1 teaspoon nutmeg
7 ounces of mascarpone
How to Make Stuffed Baked Apples
- First, scoop the inside of the apples and remove its seeds.
- Place them in a baking dish, add it into the oven and bake the apples for the next 25 minutes at 350 degrees F/175 degrees C.
- Next, prepare the filling. Heat a skillet over medium heat and add the dried plums, cranberries, and raisins.
- Pour the red wine and bring to a boil. Add the sugar, cinnamon, walnuts, and give it a good stir. Cook for 1-2 minutes.
- Prepare the crumble. Add the egg whites in a large bowl and mix them with sugar until stiff peaks appear.
- Keep your mixer running while adding the rest of the ingredients (egg yolk, flour, sugar, and tapioca flour). Mix them 1 ingredient at a time.
- Line a baking dish with parchment paper. Evenly spread the mixture on the bottom.
- Slide the tray into the oven for the next 25 minutes at 350 degrees F/175 degrees C.
- Next, fill the apples with the filling. Bake them again, for 25 minutes at the same temperature.
- For the topping, heat a small saucepan over medium heat. Pour the red wine and add the dried plums, cinnamon stick, sugar, and nutmeg. Simmer for 6 minutes.
- Remove the cinnamon stick and blend the topping ingredients. Mix it with the mascarpone.
- Also, blend the dough into crumbles.
- Serve the apples on the bed of crumble topped with the mascarpone mixture.
