They're filled with a mixture of plum and cranberry jam, topped with creamy mascarpone, on a bed of crispy crumble. It's not the simplest dessert and it may take a while to assemble, but it will surely impress your guests.

Ingredients Needed for Stuffed Baked Apples

4 large apples

For the filling:

6 dried plums
1 tablespoon dried cranberries
1 tablespoon raisins
½ cup red wine
1 tablespoon sugar
1 teaspoon cinnamon
½ cup walnuts, chopped

For the crumble:

2 egg whites
½ cup sugar
1 egg yolk
½ cup flour
¼ cup walnuts, chopped
½ cup tapioca flour

For the topping:

½ cup red wine
6 dried plums
1 cinnamon stick
1 tablespoon sugar
1 teaspoon nutmeg
7 ounces of mascarpone

How to Make Stuffed Baked Apples

  1. First, scoop the inside of the apples and remove its seeds.
  2. Place them in a baking dish, add it into the oven and bake the apples for the next 25 minutes at 350 degrees F/175 degrees C.
  3. Next, prepare the filling. Heat a skillet over medium heat and add the dried plums, cranberries, and raisins.
  4. Pour the red wine and bring to a boil. Add the sugar, cinnamon, walnuts, and give it a good stir. Cook for 1-2 minutes.
  5. Prepare the crumble. Add the egg whites in a large bowl and mix them with sugar until stiff peaks appear.
  6. Keep your mixer running while adding the rest of the ingredients (egg yolk, flour, sugar, and tapioca flour). Mix them 1 ingredient at a time.
  7. Line a baking dish with parchment paper. Evenly spread the mixture on the bottom.
  8. Slide the tray into the oven for the next 25 minutes at 350 degrees F/175 degrees C.
  9. Next, fill the apples with the filling. Bake them again, for 25 minutes at the same temperature.
  10. For the topping, heat a small saucepan over medium heat. Pour the red wine and add the dried plums, cinnamon stick, sugar, and nutmeg. Simmer for 6 minutes.
  11. Remove the cinnamon stick and blend the topping ingredients. Mix it with the mascarpone.
  12. Also, blend the dough into crumbles.
  13. Serve the apples on the bed of crumble topped with the mascarpone mixture.
