Strawberry Muffins Topped with Whipped Cream

The base for these ones is a baked mixture of whole wheat flour, plain flour, sugar, coconut oil, eggs, and milk. Then the strawberries and whipped cream come out on top and bring everything to new delicious heights!

Ingredients

½ cup whole wheat flour
1 cup plain flour
½ tablespoon baking powder
salt
½ cup coconut oil
¾ cup sugar
2 eggs
1 tablespoon vanilla extract
½ cup milk
9 ounces of strawberry
¾ cup whipped cream

Add the whole wheat flour, plain flour, baking powder, and a dash of salt to a bowl and mix. Set aside.

Add the coconut oil and sugar to a bowl and mix them using a hand mixer. Add the eggs and vanilla extract in the process, too. Do the same with the milk and the flour mixture. Mix until you have a smooth cream.

Fill a 6 cup muffin pan with the batter and bake for 20 minutes at 525⁰F/275⁰C.

Cut each muffin's top part and scoop them with a teaspoon. Insert a strawberry in the scooped slot. Add whipped cream on top and a strawberry slice.
