You are welcome to try this Greek twist on a Mexican dish. Use two tortilla wraps for this one so that it resembles a pie. Make a filling using spinach, bell pepper, and a lot of cooked onion. Make it cheesy with grated mozzarella and crumbled feta. Serve it with the refreshing Tzatziki yogurt sauce.

Ingredients Needed for Spinach Quesadilla With Tzatziki


For the veggie mixture:

1 tablespoon vegetable oil
2 medium onions, chopped
1 yellow bell pepper, diced
½ tablespoon dried oregano
½ tablespoon garlic powder
salt
pepper
1 cup frozen spinach, thawed

For the tortillas:

2 tortilla wraps
4 ounces of low moisture mozzarella, grated
2 ounces of feta cheese, crumbled

For the yogurt sauce:

½ cup greek yogurt
1 medium cucumber, shredded
2 garlic cloves, crushed
1 teaspoon lemon juice
salt
pepper
2 tablespoons of fresh dill, chopped

How to Make Spinach Quesadilla With Tzatziki

  1. For the veggie mixture:

    Heat the oil in a skillet over low heat and add the onion. Cook and stir until tender.

  2. Add the bell pepper, dried oregano, and garlic powder. Season with salt and pepper, stir and cook for 1 minute. Add the spinach and cook and stir for 1 minute more.
  3. For the tortillas:

    Heat the skillet over low heat and add one tortilla wrap. Spread on it 1/2 of the grated mozzarella.

  4. Layer the veggie mixture over the mozzarella and spread it evenly. Add the crumbled feta and the remaining mozzarella. Top with the other tortilla wrap.
  5. Cook until the tortilla turns golden brown, then flip it using a plate.
  6. For the yogurt sauce:

    Add the Greek yogurt, cucumber, garlic, lemon juice, and fresh dill to a small bowl. Season with salt and pepper and mix.

  7. Portion and serve with yogurt sauce.
