Ingredients Needed for Spinach Quesadilla With Tzatziki
For the veggie mixture:
1 tablespoon vegetable oil
2 medium onions, chopped
1 yellow bell pepper, diced
½ tablespoon dried oregano
½ tablespoon garlic powder
1 cup frozen spinach, thawed
For the tortillas:
2 tortilla wraps
4 ounces of low moisture mozzarella, grated
2 ounces of feta cheese, crumbled
For the yogurt sauce:
½ cup greek yogurt
1 medium cucumber, shredded
2 garlic cloves, crushed
1 teaspoon lemon juice
2 tablespoons of fresh dill, chopped
How to Cook Spinach Quesadilla With Tzatziki
- For the veggie mixture:
Heat the oil in a skillet over low heat and add the onion. Cook and stir until tender.
- Add the bell pepper, dried oregano, and garlic powder. Season with salt and pepper, stir and cook for 1 minute. Add the spinach and cook and stir for 1 minute more.
- For the tortillas:
Heat the skillet over low heat and add one tortilla wrap. Spread on it 1/2 of the grated mozzarella.
- Layer the veggie mixture over the mozzarella and spread it evenly. Add the crumbled feta and the remaining mozzarella. Top with the other tortilla wrap.
- Cook until the tortilla turns golden brown, then flip it using a plate.
- For the yogurt sauce:
Add the Greek yogurt, cucumber, garlic, lemon juice, and fresh dill to a small bowl. Season with salt and pepper and mix.
- Portion and serve with yogurt sauce.
