3 ounces of baby spinach
½ cup steel cut oats
salt
1 egg
1½ tablespoon of greek yogurt
1 teaspoon vegetable oil
sour cream (for topping)
cherry tomatoes (for toppings)
How to Make Spinach Oatmeal Waffles
- Add the baby spinach in a blender. Add the steel cut oats, salt, egg, and Greek yogurt. Blend everything until smooth.
- Set up your waffle maker and drizzle it with vegetable oil.
- Pour the mixture with a ladle until you reach the desired consistency. Cook the waffles for 2-3 minutes (or according to the instructions on the waffle iron).
- You can serve them topped with sour cream and cherry tomatoes!
