Ingredients Needed for Spiced Wild Rice With Chicken
For the rice:
4 cups of chicken stock
salt
1 tablespoon vegetable oil
1 ½ cups of wild rice
1 tablespoon turmeric
For the chicken breast:
1 tablespoon vegetable oil
10 ounces of chicken breast, chopped
salt
pepper
2 garlic cloves, crushed
1 teaspoon soy sauce
Assembling the dish:
1 tablespoon vegetable oil
2 onions, diced
1 teaspoon dried coriander
tabasco sauce
1 red bell pepper, julienned
½ cup sweet corn
1 teaspoon fish sauce
3 eggs
¼ cup fresh coriander
2 limes wedges, for garnishing
How to Make Spiced Wild Rice With Chicken
- For the rice:
Add the chicken stock to a cooking pot and salt it. Add the vegetable oil, stir a bit, cover with the lid and boil for 10-12 minutes. - Add the turmeric, stir, and simmer for 5 minutes. Remove from heat, strain the cooked rice, and set aside.
- For the chicken breast:
Add the vegetable oil and chicken breast to a pot over medium heat, and season with salt and pepper. Cook and stir until the chicken meat starts changing color. Add the garlic and soy sauce and cook more until the meat starts turning golden brown. Set aside. - Assembling the dish:
Add the vegetable oil, onion, dried coriander, some Tabasco sauce, the red bell pepper, and sweet corn. Stir a little, then add the cooked rice and fish sauce. Whisk the eggs and add them, too. Stir and add the chicken meat and fresh coriander. Cook and stir a little more. - Serve garnished with lime wedges.
