Ingredients Needed for Spiced Pumpkin Soup
1 pound pumpkin
2 tablespoons of vegetable oil
1 onion, diced
2 garlic cloves, chopped
2 teaspoons of ginger, chopped
1 teaspoon seven spice
2 cups of vegetable stock
salt
pepper
½ cup rice
1 cup heavy cream
½ red chili, sliced
fresh coriander
How to Make Spiced Pumpkin Soup
- Peel the pumpkin and remove the seeds and fibres from its middle. Cut the pumpkin into cubes.
- Heat the oil in a skillet over medium heat. Add the onion, garlic, ginger, and season with seven spices. Cook them for 1-2 minutes. Add the vegetable stock and the pumpkin cubes. Season with salt and pepper. Add the rice and bring it to a boil. Put a lid on and let the soup simmer for 25 minutes.
- Remove the lid, and reduce the heat. Pour heavy cream and continue cooking for another 2-3 minutes.
- You can serve the soup with red chili slices and some fresh coriander on top!
