Spiced Pumpkin Soup

This spiced pumpkin soup is just what you need to get you in the mood for this year’s Halloween! And since it’s pumpkin season, it’s also a great opportunity for you to cook it. Bring on some spicy exotic flavors, like ginger, seven spices, and chili and we’re sure you will enjoy it for years to come. As a tip, you can use the hallowed out pumpkin shell as a bowl when serving the soup.

Ingredients

1 pound pumpkin
2 tablespoons of vegetable oil
1 onion, diced
2 garlic cloves, chopped
2 teaspoons of ginger, chopped
1 teaspoon seven spice
2 cups of vegetable stock
salt
pepper
½ cup rice
1 cup heavy cream
½ red chili, sliced
fresh coriander

Steps

  1. Peel the pumpkin and remove the seeds and fibres from its middle. Cut the pumpkin into cubes.
  2. Heat the oil in a skillet over medium heat. Add the onion, garlic, ginger, and season with seven spices. Cook them for 1-2 minutes. Add the vegetable stock and the pumpkin cubes. Season with salt and pepper. Add the rice and bring it to a boil. Put a lid on and let the soup simmer for 25 minutes.
  3. Remove the lid, and reduce the heat. Pour heavy cream and continue cooking for another 2-3 minutes.
  4. You can serve the soup with red chili slices and some fresh coriander on top!
