Ingredients Needed for Spiced Pumpkin Soup

1 pound pumpkin
2 tablespoons of vegetable oil
1 onion, diced
2 garlic cloves, chopped
2 teaspoons of ginger, chopped
1 teaspoon seven spice
2 cups of vegetable stock
salt
pepper
½ cup rice
1 cup heavy cream
½ red chili, sliced
fresh coriander

How to Make Spiced Pumpkin Soup

  1. Peel the pumpkin and remove the seeds and fibres from its middle. Cut the pumpkin into cubes.
  2. Heat the oil in a skillet over medium heat. Add the onion, garlic, ginger, and season with seven spices. Cook them for 1-2 minutes. Add the vegetable stock and the pumpkin cubes. Season with salt and pepper. Add the rice and bring it to a boil. Put a lid on and let the soup simmer for 25 minutes.
  3. Remove the lid, and reduce the heat. Pour heavy cream and continue cooking for another 2-3 minutes.
  4. You can serve the soup with red chili slices and some fresh coriander on top!
