Ingredients Needed for Spaghetti With Pine Nuts and Tomato Sauce
Preparing the spaghetti:
1 tablespoon olive oil
9 ounces of pack spaghetti
Cooking the whole thing:
2 tablespoons of pine nut
2 tablespoons of vegetable oil
1 onion, chopped
1 big tomato (or 2 medium-smaller ones)
2 garlic cloves, crushed
5 ounces of tomato sauce
1 teaspoon dried basil
¼ cup white wine
1 teaspoon black peppercorn
3 tablespoons of parmesan, grated
½ cup arugula
5 ounces of cherry tomato (red and yellow)
3 tablespoons of parmesan, thinly sliced
pine nut, fried
3 tablespoons of parmesan, thinly sliced
1 ½ tablespoons of olive oil
How to Make Spaghetti With Pine Nuts and Tomato Sauce
- Heat the vegetable oil in a saucepan over low heat, add the onion, and cook it until tender. Peel and chop the tomato and add it to the saucepan. Stir a little then add the garlic. Cook and stir for 1-2 minutes.
- Add the tomato sauce and dried basil. Cook and stir for 1-2 minutes, then add the white wine. In the meantime, grind the peppercorns using a mortar and pestle, and add them to the saucepan. Add the parmesan, cook and stir a little, then add the cooked spaghetti, arugula, and cherry tomatoes. Cook and stir for 2-3 minutes.
- Serve the spaghetti garnished with fried pine nuts and parmesan and drizzled with some olive oil.
