Do you have some leftover hard-boiled eggs in your fridge and the only thing you can do with them is egg salad? Think again! In Japan they are called “shoyu tamago”, and they are soy sauce eggs. That means hard-boiled eggs dressed up with a mixture of soy sauce, balsamic vinegar, and sugar.

Ingredients Needed for Soy Sauce Eggs With Vegetables

2 eggs
2 tablespoons of soy sauce
¼ cup fish sauce
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
½ lime
1 tablespoon vegetable oil
1 onion, medium
½ red bell pepper
10 broccoli florets

How to Make Soy Sauce Eggs With Vegetables

  1. Make hard-boiled eggs. Peel them.
  2. Heat a wok.
  3. Add the soy sauce, the fish sauce, and the balsamic vinegar. Boil.
  4. Add the brown sugar.
  5. Add the hard-boiled eggs.
  6. Squeeze the lime.
  7. Cook the eggs in the boiling sauce for 3-4 minutes.
  8. In another skillet, heat the vegetable oil.
  9. Cut into quarters the onion.
  10. Slice the red bell pepper.
  11. Add the onion and the red bell pepper into the skillet.
  12. Season with salt and pepper and cook them at high-heat for about 2 minutes. Add the broccoli.
  13. Serve the vegetables and the flavored hard-boiled eggs with a rice side.
