Ingredients Needed for Sicilian Tomato Soup

  • 4-5 tomatoes, medium-sized
  • ½ teaspoon parmesan
  • salt
  • 2 tablespoons of olive oil
  • 2 garlic cloves
  • 1 teaspoon dried thyme
  • ½ cup beef stock
  • thyme

How to Make Sicilian Tomato Soup

  1. Cut the tomatoes in medium pieces.
  2. Put water in a saucepan and add the tomatoes.
  3. Sprinkle some salt and pepper and add 1 tablespoon of olive oil.
  4. Boil the water and the tomatoes for 15 minutes.
  5. Blend the boiled tomatoes until you make a cream soup.
  6. Crush the garlic and add it to the soup.
  7. Add the dried thyme, the beef stock, and the remaining olive oil.
  8. Pour the soup into a bowl and grate some parmesan on it.
  9. If you like, serve the soup with croutons.

  1. The recipe does seem nice and simple – but what would really help alongside the amounts for all the other ingredients would be a listing for the tomatoes and amount required as well.
