1 ounce butter
1 shallot, chopped
1 teaspoon fresh basil, chopped
2 tablespoons of fresh parsley, chopped
1 prosciutto slice, chopped
4 teaspoons of salmon roe
How to Cook Scallops with Herb Butter and Prosciutto
- Heat a skillet over medium heat, add the butter in and melt it.
- Add the chopped shallot, season with salt, and give it a good stir.
- Add the basil, parsley, and season with pepper. Leave the sauce for half a minute more, and turn off the heat.
- Lay the scallops in their shell and drizzle 1 teaspoon of sauce over each scallop. Shred some lemon zest and top with some prosciutto and salmon roe.
