Sausage, Sun-Dried Tomato and Bean Stir-Fry

A bean stir-fry? It may not be the most appealing dish in the world. Luckily, we’ve brought our own personal touch. We’ve added a bit of smoked sausage and sun-dried tomatoes into the mix and we’ve cooked everything in a rich, savory, wine sauce. Tweak on classic recipes, and even the simplest meals may become restaurant-type dishes.

Ingredients Needed for Sausage, Sun-Dried Tomato and Bean Stir-Fry

1 teaspoon olive oil
2 sausages, thinly sliced
1 small onion, chopped
1 leek, pale and green parts only
½ red bell pepper, sliced
½ cup white wine
4 sun-dried tomatoes
3.5 ounces of canned white beans
1 spring onion, chopped
salt
pepper
fresh parsley (optional)

How to Cook Sausage, Sun-Dried Tomato and Bean Stir-Fry

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sausage, onion, leek, and bell pepper. Pour the white wine. Simmer for 5 minutes.
  3. Bring to a boil and add the sun-dried tomatoes, white beans, and spring onion. Season with salt and pepper.
  4. Give it a good stir and simmer for 10 minutes.
