Ingredients Needed for Sausage, Sun-Dried Tomato and Bean Stir-Fry

1 teaspoon olive oil
2 sausages, thinly sliced
1 small onion, chopped
1 leek, pale and green parts only
½ red bell pepper, sliced
½ cup white wine
4 sun-dried tomatoes
3.5 ounces of canned white beans
1 spring onion, chopped
salt
pepper
fresh parsley (optional)

How to Make Sausage, Sun-Dried Tomato and Bean Stir-Fry

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sausage, onion, leek, and bell pepper. Pour the white wine. Simmer for 5 minutes.
  3. Bring to a boil and add the sun-dried tomatoes, white beans, and spring onion. Season with salt and pepper.
  4. Give it a good stir and simmer for 10 minutes.
