This snack with salmon and cucumber resembles sushi, and you can have it while on your Paleo diet because it has no rice in it. Bonus: it's a delicious and refreshing snack!

Ingredients Needed for Salmon and Cucumber Snack

1 tablespoon coconut oil
8 ounces of salmon fillet
sea salt
pepper
½ red onion, diced
1 English cucumber

How to Make Salmon and Cucumber Snack

  1. Melt the coconut oil in a skillet and lay the salmon fillet in it, skin-side down. Season with salt and pepper. Cook it until golden brown on both sides, for 8-9 minutes in total.
  2. Add the cooked salmon on your chopping board and pull it using 2 forks. Add the pulled salmon to a bowl. Add the red onion and stir.
  3. Cut the cucumber in 0.4-inch/1 cm slices. Cut and remove the inside of each slice of cucumber.
  4. Fill each cucumber slice with the salmon and onion mixture.
