Roasted Drumsticks and New Potatoes

When you’re in a hurry and want to put together a quick meal, try this one pan roasted drumsticks and new potatoes. To spice things up, use whole grain Dijon mustard, garlic and white wine to marinate the chicken. You can even add a bit of honey into the marinade if you’re into sweet and sour flavors.

Ingredients Needed for Roasted Drumsticks and New Potatoes

    2 tablespoons of olive oil
    salt
    pepper
    ¼ cup white wine vinegar
    1 tablespoon whole grain dijon mustard
    2 garlic cloves, chopped
    4 chicken drumsticks
    6 new potatoes
    1 carrot, sliced
    2 lemons slices
    1 red onion, quartered

How to Make Roasted Drumsticks and New Potatoes

  1. Pour the olive oil in a large bowl.
  2. Add salt, pepper, vinegar, Dijon mustard, and chopped garlic.
  3. Lay in the chicken drumsticks and marinate them for 30 minutes.
  4. Preheat the oven to 400°F/200°C.
  5. Place the chicken drumsticks in baking tray. Add the new potatoes, carrots, red onion, and lemon slices.
  6. Pour the remaining marinade.
  7. Slide the tray into the oven for the next 45 minutes.
