1 small cantaloupe
2 cups of ricotta
¼ cup shelled pistachio, chopped
sugar-free pancake syrup (optional)

Cut the cantaloupe in halves and scoop out its seeds. Form cantaloupe balls using a small scoop and place them in a bowl.

Divide the ricotta cheese among 4 bowls.

Top each bowl with equal amounts of cantaloupe balls, pistachio, and sugar-free pancake syrup.
