If meat just isn’t the thing for you, no problem, it’s time for a vegetarian recipe! Buy some white and purple potatoes, dice and cook them together with onion and jalapeno. It’s a simple recipe, yet rich in flavor, and it remembers us to experiment with vegetarian recipes more often!

Ingredients Needed for Purple and White Potato Hash

3 potatoes
2 purple potatoes
1 red onion
1 jalapeno
2 egg yolks
1 tablespoon vegetable oil
2 teaspoons of mustard
salt
½ spring onion

How to Make Purple and White Potato Hash

  1. Chop all of the potatoes in small dices. Thinly slice the jalapeno, and chop the red onion.
  2. Heat the vegetable oil in a skillet over high heat. Add the white potatoes and cook them for 6-8 minutes, until slightly golden. Add the purple ones and cook for 10-12 more minutes. About 2 minutes before you finish cooking them, add the jalapeno and red onion. Place the dish in 2 separate serving plates.
  3. Mix each egg yolk with 1 teaspoon of mustard. Add 1 yolk in each plate. The egg yolk will cook itself thanks to the heat released by the potatoes. Season with a pinch of salt.
  4. Serve with spring onion on top!
