If you’re planning a special meal, it’s important to have a good starter, just to shake things up a bit. You can easily impress your guests with the below recipe. The best thing about it is that the dough is entirely made of veggies, so it’s very good for you! You can fill it with salami, prosciutto, and mozzarella. It’s one hell of a combo!

Ingredients Needed for Prosciutto and Salami Rolls

1 zucchini
2 carrots
3 potatoes
1 red onion
10 green olives, without pit
parsley
3 eggs
1 tablespoon olive oil
1 ½ cups of shredded mozzarella
8 salamis
8 prosciuttos

How to Make Prosciutto and Salami Rolls

  1. Preheat the oven to 360°F/180°C.
  2. Shred the zucchini, carrots, and potatoes.
  3. Chop the red onion, parsley, and slice the green olives.
  4. Break the eggs, add them in a salad bowl, and whisk them.
  5. Add the veggies over the eggs, and mix everything together.
  6. Line a baking tray with parchment paper, and widely spread the veggie and egg mixture.
  7. Put the tray in the oven and bake for about 30 minutes.
  8. When ready, top the baked veggie and egg mixture with about a third of the shredded mozzarella. Add salami and prosciutto. Make another layer of mozzarella, and keep some for later on.
  9. Start from one of the ends, and carefully roll towards the other one. Sprinkle remaining mozzarella on top.
  10. Bake it again for 10 minutes, only this time at 440°F/220°C.
  11. You can serve it warm or cold!
