Care for a hearty vegetarian stew? Roast potatoes and sweet potatoes together, then toss them in a skillet with some veggies, spices, yogurt, and Cheddar cheese. We're not afraid to add cocoa powder and peanut butter, too. It's a filling dish for colder days.

Ingredients Needed for Potato and Sweet Potato Veggie Stew

Cooking the potatoes:

2 potatoes, cubed
1 sweet potato, cubed
½ tablespoon vegetable oil
½ teaspoon salt

Cooking the stew:

1 tablespoon vegetable oil
1 teaspoon cumin seeds
1 onion, chopped
1 tablespoon peanut butter
1 teaspoon smoked paprika
1 green chili, sliced
1 tablespoon cocoa powder
3 ounces of sun-dried tomato
½ red bell pepper, chopped
½ yellow bell pepper, chopped
3 tablespoons of yogurt
½ cup canned red beans
2 ounces of cheddar
fresh parsley for garnishing

    Cooking the stew:
    1. Continue by adding the sun-dried tomatoes, red and yellow bell peppers, while cooking and stirring for 2-3 minutes. Add the yogurt, the cooked potatoes, canned red beans, and cheddar, season with salt, and cook and stir for 2-3 minutes more.
    2. Serve garnished with fresh parsley and yogurt.
