These potato cakes topped with prosciutto and eggs are easy to make and so delicious! You can serve them for breakfast, when you want to spoil yourself with a small treat in the afternoon, or even for an unconventional dinner.

Ingredients Needed for Potato Cakes With Prosciutto and Egg

    1 white onion
    2 potatoes
    2 eggs
    pepper
    salt
    ¼ cup flour
    parsley, chopped
    vegetable oil for frying
    6 prosciuttos slices
    3 eggs
    3 olives, diced
    1 teaspoon chopped chives

How to Make Potato Cakes With Prosciutto and Egg

  1. Shred the onion and the potato. Put them in a bowl.
  2. Add the eggs, pepper, and salt.
  3. Add the flour and about 1 tablespoon of chopped fresh parsley.
  4. Combine the ingredients and shape about 6 cookies.
  5. Heat the vegetable oil in a skillet and fry the potato cookies on both sides until golden brown.
  6. Remove the potato cookies on a large plate lined with 3 layers of paper towels, to absorb the excess fat.
  7. Top each cake with one prosciutto slice, half hard-boiled egg, olives and chives.
