1 tablespoon vegetable oil
3 medium potatoes, diced
1 onion, chopped
5 eggs, whisked
¼ cup low moisture mozzarella, shredded
How to Cook Potato and Mozzarella Omelet
- Heat the vegetable oil in a skillet over low heat. Add the potatoes, stir a little, and cook for approximately 2 minutes.
- Add the onion and season with salt and pepper. Cook and stir for 2-3 minutes, then mash.
- Add the whisked eggs and mozzarella. Don’t stir. Cook for 10 minutes.
- Serve it flipped upside-down.
