Since potatoes are often regarded as a substitute for bread, why not make some potato sandwiches? Flavor the potato slices with oregano and olive oil before baking them. Also, rub the pork tenderloin with Cajun seasoning before frying it. Then it’s all about putting your sandwiches together. Make them hot and sour by finishing them off with chili, tomatoes, and pickles.

Ingredients Needed for Pork Tenderloin and Potato Sandwiches

1 large potato, cut into 4 thicker slices
salt
pepper
1 teaspoon dried oregano
1 tablespoon olive oil
7 ounces of pork tenderloin
1 teaspoon cajun seasoning
vegetable oil
2 tablespoons of ketchup
1 lettuce leaf (halved)
1 medium tomato, sliced into 4
1 fresh chili, sliced
1 small radish, sliced
1 ounce pickles

How to Make Pork Tenderloin and Potato Sandwiches

  1. Place the potato slices into a baking dish and season them with salt, pepper, and dried oregano. Drizzle with olive oil and bake for 25 minutes at 360⁰F/180⁰C.
  2. Place the pork tenderloin on the work surface. Cut it lengthwise in half. Season both sides with salt, pepper and Cajun seasoning. Rub in.
  3. Heat 1/3 cup of vegetable oil in a skillet over medium heat. Place the seasoned tenderloin halves into the skillet. Fry them for 4 – 6 minutes each side.
  4. Add 1 tablespoon ketchup on a potato slice. Place 1 lettuce leaf half, add 1 tenderloin piece, 2 tomato slices, 3 – 4 chili slices, 2 – 3 radish slices, and 1/2 an ounce pickles. Top with another potato slice. Do the same for the remaining ingredients.
