    1 ounce butter
    3 medium potatoes, cubed
    3 cups of water
    2 tablespoons of vegetable oil
    6 ounces of bacon, chopped
    2 shallots, thinly sliced
    2 garlic cloves, sliced
    salt
    pepper
    1 tablespoon fresh tarragon
    1 tablespoon fresh parsley, chopped

How to Make Pommes Persillade With Bacon

  1. Start melting the butter in a skillet over medium heat. Add the potatoes. Cook and stir for 5-6 minutes.
  2. Add the water and let them cook until it evaporates.
  3. Add the vegetable oil and bacon. Cook and stir for 1-2 minutes. Add the shallots and garlic. Cook and stir for 5 minutes.
  4. Season with salt and pepper, add the tarragon and fresh parsley and saute for another 2 minutes. Remove and serve immediately.
