For the dough:
2 ounces of butter
⅔ cup powdered sugar
1 teaspoon baking powder
1 cup flour
2 teaspoons of red wine vinegar
1 teaspoon vanilla extract
For the topping:
2 ounces of pistachios
2 tablespoons of sesame seeds
- For the dough:
Add the butter to a bowl. Mix it using a hand mixer.
- Add the powdered sugar, egg, baking powder, 1 tablespoon of flour, red wine vinegar, and vanilla extract. Continue to mix until smooth.
- Add 2 more tablespoons of flour and mix until even using a spatula. Add the remaining flour and mix using your hands until you have a dough. Form it into a lump and let it rest for 30 minutes.
- For the topping:
Add the pistachios to a mixer bowl and crumble them. Transfer them to a bowl. Also, transfer the sesame seeds into a bowl.
- Start forming little discs from the dough. We’ve got 9 of them. Coat them with sesame on one side and with crumbled pistachios on the other.
- Line a baking tray with parchment paper. Place the coated dough discs on it and bake for 20 minutes at 350⁰F/175⁰C.
