This is a combo you won't regret trying it: pineapple and pancakes. Make a caramel sauce, coat the pineapple rings with it and put them in the middle of the pancakes while they are in the pan. The result is pretty amazing!

Ingredients Needed for Pineapple Pancakes

1 egg
2 tablespoons of white sugar
¼ cup milk
salt
⅔ cup flour
¼ cup brown sugar
4 pineapples rings
2 teaspoons of butter

How to Make Pineapple Pancakes

  1. Whisk the eggs.
  2. Add the white sugar and the milk.
  3. Mix them with an electric mixer, until they turn foamy.
  4. Sprinkle some salt.
  5. Add the flour to make a batter.
  6. Heat a skillet and melt the brown sugar, on high heat.
  7. Add the pineapple rings. After a few seconds, turn them on the other side.
  8. Add the butter. Let the butter melt and caramelize the pineapple.
  9. Grease another skillet and heat it.
  10. Take some batter with a ladle and pour it in the skillet.
  11. Put one pineapple ring in the middle of the pancake.
  12. If you want, put 1 blueberry in the middle of the pineapple ring.
  13. Cook the pancake on both sides.
  14. Make 4 pancakes with this batter and serve them with the caramel syrup in which you fried the pineapple rings.
