Pina Colada is Puerto Rico’s gift to the world. The name means „strained pineapple”, but there’s more to the cocktail than fruit. For instance, some coconut! You can make all your summer evenings exciting by turning Pina Colada into ice cream. The best news? It doesn’t even have any dairy.

Ingredients Needed for Pina Colada Ice Cream

1 pineapple, cubed
1 cup coconut milk
3 tablespoons of white sugar
¼ cup lemon juice
2 tablespoons of white rum
¼ cup walnut, crushed
⅔ cup coconut flakes

How to Make Pina Colada Ice Cream

  1. Add the pineapple cubes in the blender.
  2. Add the coconut milk, sugar, lemon juice, and crushed walnuts.
  3. Blend until smooth.
  4. Stop the blender and add the coconut flakes. Blend for 1 more minute.
  5. Pour the mixture into a large dish or a storage container.
  6. Freeze until firm (about 2 to 3 hours).
  7. If you want, serve the ice cream with honey.
