Ingredients Needed for Parmesan Zucchini and Corn Skillet
2 tablespoons of olive oil
2 garlic cloves, crushed
1 medium-sized zucchini, cubed
½ cup sweet corn
salt
½ teaspoon thyme powder
½ teaspoon dried basil
½ teaspoon dried oregano
pepper
¼ cup lime juice
2 tablespoons of fresh parsley, chopped
¼ cup parmesan, shredded
How to Make Parmesan Zucchini and Corn Skillet
- Heat the olive oil in a skillet over medium heat. Add the garlic, zucchini, and cook for 2 minutes.
- Add the sweet corn, and season with salt, pepper, thyme, basil, and oregano.
- Cook everything for 3-4 minutes and then pour the lime juice. Cook for 2-3 more minutes.
- Garnish with parsley and serve with shredded parmesan on top.
