Zucchini and mozzarella make for a great combo, and here is a nice snack that proves it. They’re also quite healthy, because they’re not deep-fried, but oven-baked with only a drizzle of olive oil. Serve them before the main course, because any meal requires a good starter!

Ingredients Needed for Oven-Baked Zucchini and Mozzarella Balls

2 zucchini, shredded
salt
pepper
⅓ cup breadcrumbs
½ cup mozzarella, shredded
1 tablespoon olive oil
2 eggs

How to Make Oven-Baked Zucchini and Mozzarella Balls

  1. Preheat the oven to 400°F/200°C.
  2. Add the shredded zucchini into a large bowl. Season with salt and pepper. Add the breadcrumbs, mozzarella, and egg yolk and mix them until evenly blended.
  3. Pinch off a piece of the mixture and form small balls, until all the mixture is used.
  4. Add the balls in an oven tray and drizzle them with olive oil.
  5. Slide the tray in the oven for 25 minutes.
