Ingredients

2 oranges
1 tablespoon white wine vinegar
1 teaspoon dijon mustard
salt
pepper
2 tablespoons of extra virgin olive oil
1 small red onion,
¼ cup pitted kalamata olive
1 teaspoon fresh tarragon, chopped
2 ounces of goat cheese
2 tablespoons of almond, sliced

Squeeze one orange and add 6 tablespoons of juice in a medium bowl. Add white wine vinegar, Dijon mustard, salt, pepper, and extra virgin olive oil. Stir and set aside the dressing.

Take the remaining 2 oranges. Use a small, very sharp knife to cut peels and outer membrane from the orange slices. Add the peeled orange slices to a bowl.

Add the red onion, kalamata olives, and tarragon to the same bowl. Add dressing by taste and toss gently.

Divide into two bowls and top with crumbled goat cheese and almonds.
