Ingredients

1 tablespoon vegetable oil
3 bacon slices
2 eggs
salt
¼ cup water
¼ cup cheddar, shredded
½ avocado, thinly sliced
1 teaspoon yogurt
½ spring onion, chopped

Ingredients

Steps

1
Done

Heat the vegetable oil in a skillet over medium heat.

2
Done

Add the bacon slices and cook them until crispy.

3
Done

Remove the bacon and place 2 stainless steel cooking rings inside the skillet.

4
Done

Crack one egg inside each hole.

5
Done

Use a fork and slowly whisk the eggs.

6
Done

Cover with a lid until the eggs set.

7
Done

Remove the lid and divide the shredded Cheddar into the 2 cooking rings. Again, top with a lid and leave it until the cheese is completely melted.

8
Done

Set the cooking rings aside.

9
Done

Start assembling the sandwich. Take out the eggs and use them instead of bread bun slices: add the avocado slices and fried bacon between them.

10
Done

Top with yogurt and spring onion.

I guess I’ve always had a passion for cooking ever since I was a kid when I was mom’s little helper in the kitchen. Even though I wasn’t actually cooking, I was a picky eater, and I focused on bringing more flavor to her dishes, by adding extra herbs and spices I felt might enrich it. Time has passed, and I haven’t changed that much: I am now my girlfriend’s helper.
