Ingredients Needed for Middle Eastern Pita Sandwich
For the tzatziki sauce:
3.5 ounces of Greek yogurt
1 small cucumber
1 small red onion, chopped
fresh mint
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
1 tablespoon olive oil

For the veggie salad:
3 ounces of couscous, cooked
1 spring onion, chopped
5 cherry tomatoes, chopped
1 small cucumber, diced
3 tablespoons of fresh parsley, chopped
fresh mint
1 tablespoon lemon juice
1 tablespoon olive oil
1 tortilla wrap
canned chickpeas (optional)
feta cheese (optional)
fresh dill (optional)
How to Make Middle Eastern Pita Sandwich
- Wash and shred the cucumber, then squeeze out the water from it.
- Add the yogurt sauce, shredded cucumber, red onion, mint, and dill in a small bowl. Season with salt, pepper, and mix with a fork until you get a tzatziki sauce.
- Add the cooked couscous into a separate bowl.
- Add the spring onion, cherry tomatoes, and cucumber. Add parsley, mint, and drizzle with olive oil and lemon juice. Mix with a tablespoon.
- Evenly spread the tzatziki sauce over the tortilla.
- Top the tortilla with the couscous and veggie mixture. You can add some more veggies, chickpeas, feta cheese, and fresh dill.
