Ingredients Needed for Middle Eastern Pita Sandwich

For the tzatziki sauce:

3.5 ounces of Greek yogurt
1 small cucumber
1 small red onion, chopped
fresh mint
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
1 tablespoon olive oil
salt
pepper

For the veggie salad:

3 ounces of couscous, cooked
1 spring onion, chopped
5 cherry tomatoes, chopped
1 small cucumber, diced
3 tablespoons of fresh parsley, chopped
fresh mint
1 tablespoon lemon juice
1 tablespoon olive oil
1 tortilla wrap
canned chickpeas (optional)
feta cheese (optional)
fresh dill (optional)

How to Make Middle Eastern Pita Sandwich

  1. Wash and shred the cucumber, then squeeze out the water from it.
  2. Add the yogurt sauce, shredded cucumber, red onion, mint, and dill in a small bowl. Season with salt, pepper, and mix with a fork until you get a tzatziki sauce.
  3. Add the cooked couscous into a separate bowl.
  4. Add the spring onion, cherry tomatoes, and cucumber. Add parsley, mint, and drizzle with olive oil and lemon juice. Mix with a tablespoon.
  5. Evenly spread the tzatziki sauce over the tortilla.
  6. Top the tortilla with the couscous and veggie mixture. You can add some more veggies, chickpeas, feta cheese, and fresh dill.
