Mexican Wedding Cookies

These cookies are traditionally made with walnuts, pecans, or almonds. We’ve tried them many times, and we can say they’re wonderful. Soft, nutty and buttery, we can’t wait to try all other versions.

Ingredients Needed for Mexican Wedding Cookies

    5 ounces of butter, room temperature
    ½ cup powdered sugar
    1 teaspoon vanilla extract
    2 teaspoons of water
    2 cups of flour
    1 cup almonds, crushed

How to Make Mexican Wedding Cookies

  1. Add the butter and powdered sugar to a large bowl.
  2. Mix until you obtain a smooth, yellow-colored mixture.
  3. Add the vanilla extract and a drop of water. Mix so you can incorporate them into the mixture.
  4. Add the flour 1 tablespoon at a time and mix with a spatula to incorporate it into the mixture.
  5. Add the crushed almonds and mix well using the same spatula.
  6. Shape the mixture into 1.5 inches (4 cm) thick balls.
  7. Line a baking tray with parchment paper and lay the balls on it.
  8. Slide the tray into the oven for the next 20 minutes at 330ºF /165ºC.
  9. You can serve the cookies coated with powdered sugar.
