Mexican Sausage Tortilla Wraps

Here’s a nice and savory snack, just perfect to make for a weekend brunch. Its highlights are sausage and beans, all wrapped in a delicious tortilla, topped with a nice amount of cheese. It’s fresh, spicy, and it’s packed full of protein!
Ingredients Needed for Mexican Sausage Tortilla Wraps
1 tablespoon vegetable oil
1 leek, green and white parts only
2 pork sausages s, chopped
2 ounces of canned red beans
2 ounces of canned white beans
2 ounces of sweet corn
2 tortilla wraps
1 tomato, sliced
¼ cup mozzarella, shredded
1 green chili, thinly sliced
2 tablespoons of yogurt
How to Make Mexican Sausage Tortilla Wraps
- Heat the vegetable oil in a skillet over medium heat.
- Add the leek and sausages, and cook them for 2 minutes. Add the beans and corn, and leave the skillet on heat for another 2-3 minutes, while occasionally stirring.
- Place the tortilla wraps on your working surface. Add some tomato slices and add half of the the bean and sausage mixture on each tortilla. Top with a few chili slices, and one tablespoon of yogurt.
- Fold the tortilla wraps and serve.
