Mashed Sweet Corn Soup

Do you want to taste the sweet corn without its slightly stringy texture? Do you want to warm yourself with a nice meal? If you’ve said yes to these questions, then your answer is sweet corn soup. Cook the corn together with the shallot, mash them, then flavor the whole thing. Cook again with heavy cream, flavor some more, and there you have it.

Ingredients Needed for Mashed Sweet Corn Soup

    2 ounces of butter
    2 shallots, chopped
    1 pound sweet corn
    4 cups of water
    1 fresh thyme sprig
    ½ teaspoon paprika
    lime zest
    ½ tablespoon olive oil
    ½ cup heavy cream

    For garnishing:

    lemon zest
    1 teaspoon olive oil

How to Make Mashed Sweet Corn Soup

  1. Melt the butter in a cooking pot over low-medium heat, add the shallot and cook until tender. Add the sweet corn and water, season with salt and pepper, add the thyme sprig and bring to a boil. Simmer for 5-10 minutes.
  2. Add the cooked corn to a blender and blend, then strain it into a cooking pot using a strainer and a tablespoon. Remove the stringy parts in the strainer.
  3. Add the paprika, lime zest, and olive oil to the cooked corn cooking pot, place it on low-medium heat, and cook for 5-10 minutes. Also, add the heavy cream and whisk continuously in the process.
  4. Serve with a little olive oil and garnish with lime zest.
