Ingredients Needed for Marinated Pork Roast With Stir-Fried Sweet Corn

For the pork:

14 ounces of pork tenderloin, sliced into 12 pieces
1 tablespoon olive oil
2 teaspoons of soy sauce
1 tablespoon lime juice
1 teaspoon dried coriander
1 tablespoon orange peel powder
salt
pepper

For the sweet corn:

1 teaspoon vegetable oil
1 tablespoon butter
1 fresh rosemary sprig
cooked sweet corn on the cob (6-ounce), sliced into 5 pieces
2 ounces of canned sweet corn
1 chili, sliced
1 tablespoon lime juice
salt

How to Make Marinated Pork Roast With Stir-Fried Sweet Corn

For the pork:
  1. Add the sliced pork to a bowl. Also, add olive oil, soy sauce, lime juice, dried coriander, and orange peel powder.
  2. Season with salt and pepper. Mix all until the meat is completely coated. Marinate for 30 minutes.
For the sweet corn:
  1. Heat a skillet over low heat and add the olive oil and butter. As the butter melts add the rosemary and the sweet corn. Stir a little.
  2. Add the chili and lime juice. Cook for 6 – 8 minutes while occasionally stirring. Set aside.
Assembling the dish:
  1. Heat 2 teaspoons of oil in an ovenproof skillet over medium heat and add the marinated meat. Fry for 10 minutes on both sides.
  2. Transfer to the oven and bake for 20 minutes at 360⁰F/180⁰C.
  3. Serve the pork with spicy sweet corn.
