Ingredients Needed for Marinated Pork Roast With Stir-Fried Sweet Corn
For the pork:
14 ounces of pork tenderloin, sliced into 12 pieces
1 tablespoon olive oil
2 teaspoons of soy sauce
1 tablespoon lime juice
1 teaspoon dried coriander
1 tablespoon orange peel powder

pepper
For the sweet corn:
1 teaspoon vegetable oil
1 tablespoon butter
1 fresh rosemary sprig
cooked sweet corn on the cob (6-ounce), sliced into 5 pieces
2 ounces of canned sweet corn
1 chili, sliced
1 tablespoon lime juice
salt
How to Cook Marinated Pork Roast With Stir-Fried Sweet Corn
For the pork:
- Add the sliced pork to a bowl. Also, add olive oil, soy sauce, lime juice, dried coriander, and orange peel powder.
- Season with salt and pepper. Mix all until the meat is completely coated. Marinate for 30 minutes.
For the sweet corn:
- Heat a skillet over low heat and add the olive oil and butter. As the butter melts add the rosemary and the sweet corn. Stir a little.
- Add the chili and lime juice. Cook for 6 – 8 minutes while occasionally stirring. Set aside.
Assembling the dish:
- Heat 2 teaspoons of oil in an ovenproof skillet over medium heat and add the marinated meat. Fry for 10 minutes on both sides.
- Transfer to the oven and bake for 20 minutes at 360⁰F/180⁰C.
- Serve the pork with spicy sweet corn.
