For these mango sorbet sandwich cookies, you can use store-bought sorbet, or you can make it at home. Sure, the fastest way is to buy it. But making it is very easy: place cubed mango in a food processor, pour in some sweetener and lime juice, and puree it until smooth. Place it in an ice cream maker and freeze thoroughly.

1 cup whipping cream
1 teaspoon vanilla extract
½ teaspoon mango extract
1 pound mango sorbet
¼ cup strawberry jam
24 cookies, round shaped
chocolate topping

How to Make Mango Sorbet Sandwich Cookies

  1. Pour the whipping cream in a mixing bowl.
  2. Add the vanilla and mango extract.
  3. Whip the whipping cream using a hand mixer until you get a dense and firm texture. Set it aside.
  4. Remove the mango sorbet from the pack. Use a round cutter with the same diameter as your cookies and cut the sorbet into slices.
  5. Spread strawberry jam on one cookie, add one sorbet slice on it, pipe some whipped cream, then top with another cookie.
  6. Do the same with the remaining ingredients.
  7. If you like, you can top the cookie sandwiches with chocolate topping.
