What a great idea for a breakfast sandwich! A fresh, crispy baguette, drizzled with hummus, and filled with a delicious salad made of apple and veggies. Serve it with a touch of sunflower seeds, for an extra crunch, and a bit of cottage cheese. You’ll be asking us where’s the meat, but this sandwich is so nice and fresh, it really doesn’t need any.

Ingredients Needed for Hummus and Apple Salad Sandwich

2 tablespoons of balsamic vinegar
1 tablespoon olive oil
salt
1 cucumber, sliced
1 carrot, sliced
1 apple, diced
½ red chili, thinly sliced
1 ounce peas
3 radishes es, sliced
1 tablespoon sunflower seeds
1 tablespoon parsley, chopped
2 ounces of lettuce
1 baguette
2 tablespoons of hummus
2 tablespoons of cottage cheese

How to Make Hummus and Apple Salad Sandwich

  1. You can start with the salad dressing. Add the olive oil, balsamic vinegar, and salt in a small bowl.
  2. Start adding the veggies in a large bowl. Add the cucumber, carrot, apple, chili, peas, radishes, sunflower seeds and parsley. Pour the dressing and toss the salad.
  3. Slice the baguette through the middle, and spread hummus on one slice of bread. Top the hummus with salad and cottage cheese, and close it with the remaining slice of bread.
