2 tablespoons of lemon juice
1 tablespoon honey
1 teaspoon mustard
1 garlic clove, crushed
1 teaspoon black peppercorn
12 ounces of chicken breast, halved
1 lemon sliced
4 medium-sized potatoes, halved
1 rosemary sprig
fresh parsley for garnishing, chopped
How to Cook Honey Mustard Chicken Breast and Potatoes
- Add the lemon juice, honey, mustard, garlic, some lemon zest, some salt, and black peppercorns to a bowl and mix them. Add the chicken breast, coat it with the mixture and marinate for 30 minutes.
- Place the lemon slices into a medium-sized baking dish, add the chicken breast halves, and garnish with the halved potatoes.
- Add the rosemary sprig on top, season with salt and pepper, and drizzle some of the sauce resulted from marinating the meat. Roast for 25 minutes at 360⁰F/180⁰C.
- Serve garnished with fresh parsley.
