How to Make Healthy Eggplant Fries
- Preheat the oven to 400 degrees F/200 degrees C.
- Add the almond flour in a large bowl. Add the salt, pepper, and mix with a bowl.
- Add the eggs in a large bowl and whisk them.
- Cut the eggplant into french-fry shapes.
- Coat the eggplant fries with the almond flour mixture and whisked egg.
- Preheat the oven to 400 degrees F/200 degrees C.
- Lay the fries in a glass baking tray and drizzle them with coconut oil.
- Slide the tray into the oven for the next 15 minutes!
