Halloumi and Squash Omelette

Few dishes are easier to prepare than your everyday omelet. But if you’re feeling a little bored with it, know that you can always build on it and make it better. Make it cheesy and slightly crispy by frying halloumi slices. Make it more interesting and bring some smooth sweetness to it by adding butternut squash. This is breakfast on a whole new level.

Ingredients Needed for Halloumi and Squash Omelette

    1 tablespoon vegetable oil
    3 ounces of halloumi cheese, sliced
    4 ounces of cooked butternut squash, sliced
    1 sweet pepper, sliced
    2 garlic cloves, sliced
    2 eggs, whisked
    fresh parsley for garnishing

How to Make Halloumi and Squash Omelette

  1. Heat the oil in a cast-iron skillet over low heat, add the halloumi cheese, and fry it on both sides until golden brown. Set the cheese slices aside.
  2. Use the same skillet to fry the sliced squash on both sides until golden brown, then add the sweet pepper, garlic, fried halloumi, and whisked eggs. Cover with a lid and cook for 2 minutes.
  3. Remove from heat and bake in the oven for 10 minutes at 340⁰F/170⁰C.
  4. Serve garnished with fresh parsley.
