Ingredients Needed for Halloumi and Squash Omelette
1 tablespoon vegetable oil
3 ounces of halloumi cheese, sliced
4 ounces of cooked butternut squash, sliced
1 sweet pepper, sliced
2 garlic cloves, sliced
2 eggs, whisked
fresh parsley for garnishing
How to Make Halloumi and Squash Omelette
- Heat the oil in a cast-iron skillet over low heat, add the halloumi cheese, and fry it on both sides until golden brown. Set the cheese slices aside.
- Use the same skillet to fry the sliced squash on both sides until golden brown, then add the sweet pepper, garlic, fried halloumi, and whisked eggs. Cover with a lid and cook for 2 minutes.
- Remove from heat and bake in the oven for 10 minutes at 340⁰F/170⁰C.
- Serve garnished with fresh parsley.
